How to change default font for subtheme without changing main theme?

As the title of this post, I'd like to know how to change the default font for a custom subtheme, I need to change it to "Lato", imported via Google Fonts but the scss configuration loads always "system-ui, -apple-system, "Segoe UI", Roboto, "Helvetica Neue", "Noto Sans", "Liberation Sans", Arial, sans-serif, "Apple Color Emoji", "Segoe UI Emoji", "Segoe UI Symbol", "Noto Color Emoji".

I don't want to change configurations on main Bootstrap 5 theme because if I update it I have to change it back every time.

Sorry, I made it by overriding the default font via custom css on my subtheme, I had a wrong syntax that corrupted the css -_-

In your subtheme you need to modify scss variables and complete into css.
