Problem/Motivation

We are switching to Drupal 10.

We no longer support Gin as it's a contrib solution, less maintainable, and there are bugs.

Let's switch to Claro admin theme as it's a nice core theme and does not require any dependencies.

Remaining tasks

1. Get rid of rocketship_florista_demo_profile.
2. Update dropsolid_rocketship_profile to the latest release of 6.1.x
3. Update rocketship_core to the latest release of 6.1.x
3. Provide release notes if any manual changes needed for existing projects.
4. Update project detail page and remove any Gin related information/screenshot
4.1. If needed record new gifs where Claro is used
