Don't request specific version of drupal/commerce

Problem/Motivation

In the PHP8.1 release we required drupal/commerce:^2.36. This enforces PHP 8.0 (https://git.drupalcode.org/project/commerce/-/blob/8.x-2.36/composer.jso...). We should allow all versions of drupal/commerce:^2.0

Proposed resolution

Change composer.json to require drupal/commerce:^2.0
