Diagram: Update entity reference diagram to use MermaidTrait

Problem/Motivation

When the workflow diagram was introduced ✨ Diagram workflow states and transitions Fixed , it added a MermaidTrait that had some Mermaid helpers that could be used in the EntityReferenceDiagramController. The controller should be updated to use the Trait and be more DRY.
