Can't install 2.x branch on PHP 8.0

Problem/Motivation

Trying to install the module on an environment using php 8 doesn't work.

drupal/search_api_opensearch dev-2.x requires php ^8.1 -> your php version (8.0.26) does not satisfy that requirement.

As the branch supports both Drupal 9 and 10 it should also support PHP 8.0
