Using the latest version of openid_connect
Service has been renamed @ https://www.drupal.org/project/openid_connect/issues/3201502 →

Symfony\Component\DependencyInjection\Exception\ServiceNotFoundException: You have requested a non-existent service "plugin.manager.openid_connect_client". Did you mean this: "plugin.manager.openid_connect_client.processor"? in Drupal\Component\DependencyInjection\Container->get() (line 153 of /var/www/web/core/lib/Drupal/Component/DependencyInjection/Container.php).

Sorry my bad, the site was using an old version. I have updated openid_connect to 1.2 and the error is gone.
