By adding display none to the .priority-low this can be achieved, added the same to the file -
core/themes/olivero/css/components/table.css
(added enhancement for the .priority-medium - comparing with claro for this)here's the patch for the same.

FYI issue should be in review when it’s ready.
Also wouldn’t recommend just turning patches to MRs those don’t receive credit. Unless other tasks are addressed
