Our goal is to have possibility to add date/date-time element to our webform with defined format and have a possibility to select the date by datepicker. For now we can create a filed with custom/predefined format but without datepicker (text input selected as date element). Our final goal is to be able to create a field with US date format and have a datepicker on it.
Maybe we missed something and there is a way to do this (except localized element and also make it just as one of the possibilities - not as common format) - let us know.

jQueryUI datepicker support has been deprecated. You would need to research and implement a customizable date picker using an external library in a dedicated contrib module.
