Clarifying the title, and that this is blocked by a core bug.
I can create a new field and assign it to Menu items but it is not available in the code at all. I have added a field_category to my menu items but I cannot render the value. In fact, I cannot even access an entity value and it does not appear to even use MenuItemExtras.
