At the moment the sections in the properties panel are collapsed per default. for the process in general as well as for every component like a startevent or task and so forth. that entails an extra click to expand a section.
two or three weeks ago https://github.com/bpmn-io/bpmn-js-properties-panel/issues/618 has landed upstream enabling to open sections per default. i would suggest the following default settings:
process
general - expanded (currently collapsed)
documentation - expanded (currently collapsed)
startevent, task & sequenceflow (right after dragging a startevent or task icon to the canvas - no template selected yet)
