Commerce Order fields excluded from GDPRCollector->listFields

Problem/Motivation

The code in GDPRCollector->listFields() contains a comment to say that commerce order entities will be skipped as they break bundles. This appears to be outdated and can be removed.

Tested it with a Drupal 10 installation. The overview still breaks. Updating the status back to "Needs work".
