Closing this as won't fix, as this feature would need to go to the contrib space.
If I create a new image or tags field without using the same machine name as the default, the theme quickly becomes inconsistent.
You have to create a small contrib module in addition to the Olivero theme, to map the fields in the Drupal interface.
For example, for the image and tag controls, you must add a class selector in "Manage display mode".
