The problem still occure with a new Drupal 9.1.7 installation, commerce_stock with commerce_stock_field, version : 8.x-1.0-alpha5 (as declared in commerce_stock_field.info.yml)
drupal/commerce_stock_notifications 1.0.0-alpha6 requires drupal/commerce_stock_field * -> satisfiable by drupal/commerce_stock_field[1.0.0-alpha5, 1.0.0-alpha4, 1.0.0-alpha3, 1.0.0-alpha2, 1.0.0-alpha1, dev-1.x, 1.x-dev] but these conflict with your requirements or minimum-stability.

I tested this on Drupal 9.5.11 and was able to install the module without problems. All that was needed was to change minumum stability to "minimum-stability": "dev",. Feel free to reopen if this is still a problem. Thanks.
