Add Reservation generates 'website encountered an unexpected error'

I am getting an error when trying to create a reservation on a fresh installation of BEE. I am trying to build a basic booking system for a sailing club to reserve camping spaces and book the club resources like boats and canoes. I created a new content type selected the BEE options to make it bookable (Ive tried daily or hourly booking), then create a new node - both of which steps work as normal with no errors. I click 'Add Reservation' and fill out the form being careful not to get the dates the wrong way around, as soon as I hit the 'Add Reservation' button to make the booking I get the error "The website encountered an unexpected error. Please try again later."

Installation of BEE was not done using Composer, it was done by manually installing the modules and dependencies, and using Ludwig to identify and resolve missing components.

Drupal 9.1.3
PHP 7.4.11
DB 10.4.15-MariaDB

I've installed the following modules:

Ludwig 8.x-1.7
Services 9.0.x-dev
Full Calendar Library 8.x-1.1
Office Hours 8.x-1.3
BAT 8.x-1.3
Bat API 8.x-1.1
BEE 8.x-1.2

Installation and activation of BEE completed without any issues and Ludwig only identified one issue prior to module activation which was the BAT library, which it successfully installed. So in terms of the setup there are no reported errors.

Ive tried several nodes, and created and tried multiple content types using both the daily and hourly format.

I've also tried using the hosting providers 'reset permissions' option in case it was a permission from the initial install.

At this point I am stuck on where to go next. I've attached some screenshots in case that helps.
