Validate and complete Gender field implementation

Problem/Motivation

The Gender field is already partially stubbed out in /src/Plugin/Field/FieldType/Gender.php and /src/Plugin/Field/FieldWidget/Gender.php, but it is not complete.

Proposed resolution

Review the existing code, update and complete it as necessary based on the gender question from Open Demographics.
