Simplify the entity type names

Problem/Motivation

The entity type IDs are too long.

Proposed resolution

Simplify the entity type names:

entity_legal_document to legal_document.
entity_legal_document_acceptance to legal_document_acceptance
entity_legal_document_version to legal_document_version

Provide an update path if possible. If is not possible, document how to manually update from 3.0.x to 4.0.0-alpha1
