use is_callable instead function_exists

Using is_callable instead of function_exists to test the field callback would be safer and allows to pass a static method with the array descriptor syntax.

Please find attached a patch that fixes that.

D7 reached its EOL back in January 2025, and there is no active release for D7 for this module anymore.
Development or support is not planned for D7.

All D7-related issues are marked as outdated in a bunch.
Still, everyone can apply the patch above (not tested by the maintainers) to their projects.

If the issue's topic is actual in D10+ versions, please create a follow-up issue or comment on this one (to re-open and switch to the 2.2.x development branch).
