I also hit this issue, but can get buy it on my local DDEV but just updating the limit.
I get the error when trying to save configurations:
"Warning: Unknown: Input variables exceeded 2000. To increase the limit change max_input_vars in php.ini. in Unknown on line 0"
I guess it happens when there are too many entity bundles/types/fields.
It would make sense to split the form.
