I found a similar issue that's been patched on the webform module. Applying the same solution to the Mailchimp handler fixed the issue I was running into.

The website encountered an unexpected error. Please try again later.

Drupal\Core\Entity\EntityStorageException: The "webform_submission" entity cannot have a URI as it does not have an ID in Drupal\Core\Entity\Sql\SqlContentEntityStorage->save().
