Add an API docs topic to cover entity characteristics in general and how they work

Are there any additional classes that should be tagged? Not sure how to search.

I'm fairly confident I got them all -- I researched them when I added them to the interfaces you can add to a generated entity type in Module Builder.

Also, if it turns out we did miss some, we can add a patch later, so after this much time, I'd say let's just get this in!

That does not exist, it's actually \Drupal\Core\Entity\FieldableEntityInterface::baseFieldDefinitions(). 😅
