It would be useful to be able to configure additional form modes for the order-item form, and select which form mode will be used for different view modes of the Variation entity.
For adding form modes the Form Mode Manager module can probably be used. Adding form modes is outside the scope of this issue.
To select which form mode a Variation view mode should use, it will be necessary to change from using a pseudo-field to using a computed field, with an appropriate field formatter.
An update path should be provided to convert existing pseudo-field instances to computed field instances.
