I have disabled the Edit and Delete links in the Format settings: Table of field collection items (entity display settings page) by removing them. ("Leave the title empty, to hide the link.")
However, this has not effect on the Field Collection View, which stll shows the 'Operations' column with the Edit and Delete links.
