Since Export results with answers → it has been possible to view or export the results table -- including the answers -- for each question. This is a great help when marking quizzes for large numbers of users, however it doesn't work for quizzes which have questions chosen at random by taxonomy term. These quizzes simply do not include the added answer columns.
For a quiz taking 2 questions from 2 categories each with three possible questions I can imagine a table along the lines of:
For a quiz with a large number of questions in each category and a small number of users it might make sense to only add columns for those questions that are used, although in my case I have relatively small pools of questions compared with the number of users attempting the quiz.
I really don't understand much of the views API and need to export the data fairly soon so will most likely cobble together a query that works for my site rather than fixing this properly myself, but if someone wants to point me in the right direction I will take a look and see if I can solve it for the general case as well.
