Adopt Markdown for README.txt and other documentation

Markdown is a highly used markup language. It provides a common syntax in order to define formatting for text. CommonMark brings a strict specification for Markdown, documenting how to use it.

Using Markdown for our in-repo documentation will make README, UPDATE, et al, a lot nicer to read.
