How does Performance caching work?

I want to make my site faster by enabling Performance caching for .css and .js files, but I don't quite understand how it works exactly...

From what I've read, enabling these options will put all styles into their own file and all javascript into its own file, minus the whitespace and comments. What happens if I then want to edit/change something in the css or javascript? Are there backups of my original .css and .js files somewhere, or does turning off performance put everything back the way it was?

Any assistance would be much appreciated!
