According to https://www.drupal.org/node/3059866 → "All events provided by this module are listed in \Drupal\search_api\Event\SearchApiEvents". Searching that file for the string "task" finds nothing.
Try to react to the start of tracker rebuild.
Document the events from $this->eventDispatcher->dispatch($event, 'search_api.task.' . $task->getType()); this.
(Even better, drop events for oop hooks but I guess that's too much to ask.)
