Refine Mercury's starter kit configuration

Problem/Motivation

When you use Mercury as a starter kit, a ton of things are renamed from mercury to the machine name of the new theme. That's all well and good, but there are some things in Mercury's codebase that we would not want to be renamed, like certain CSS classes.
