I've found that the name does change in some places but not in all, which I why I thought it wasn't working.
Mark as NFA.

On the quiz/config/quiz page, under "look and feel": "display name" changing the name from Quiz to Examination has no effect.
Also, "Control aspects of the Quiz module's display" does not appear to link to anything.
