Improve module schema defintions

Problem/Motivation

When installing the module, adding fields, changing formatter, widget and settings recent Drupal versions show a bunch of schema related warnings.

Mainly caused by schema inconsistencies or missing schema definitions for formatter and fields.

Proposed resolution

Add missing schema definitions and fix existing grid entity schema.
