I was unable to replicate the reported issue. After performing a fresh setup and adding a plain text field, it displayed correctly within the attribute.
Open API documentation show simple drupal field like text or date under relationships instead of attribute
Create a new field e..g plain text in any content type
Go to the openapi documentation.
The field is getting display under relationships
The simple field should be visible under attribute
