CI scripts actualisation

Problem/Motivation

Running CI scripts locally against the project leads to errors:

Error: Command failed with exit code 1: docker pull registry.gitlab.com/drupal-infrastructure/drupalci/drupalci-environments/php-8.1-ubuntu-apache:production
Error response from daemon: manifest for registry.gitlab.com/drupal-infrastructure/drupalci/drupalci-environments/php-8.1-ubuntu-apache:production not found: manifest unknown: manifest unknown

I believe the same thing applies to the scripts for the project on git.drupalcode.org.

Steps to reproduce

Execute drupal-ci-local locally.

Proposed resolution

Actualise CI scripts to be compatible with the current https://git.drupalcode.org/project/gitlab_templates.
