Unfortunately this how it works by design. The dialog is provided by drupal core. You would need to apply your own styles to dialogs.
We are using Admin Dialog (v.1.0.29) to tame Group module forms.
All group-related URLs are configured to 'Use the admin theme'- in our case Gin.
They do so as expected when not under Admin Dialogs' control.
We have the module controlling the following path nicely for example...
/group/1/content/add/group_node%3Aarticle
When we have module configured to poop them out in a off-canvas...
That all works as expected...
But when the same path is configured to pop up in a Modal, the admin theme does not kick in...
