Firstly, thanks for an excellent module! This proposal is to support a more flexible output than the raw webform values provided today.
If one of my webform elements is an entity reference for a node the sheet will be populated with the node ID. If I want to know the title of that node then I'll need to either go back to Drupal to check or add an additional field to the webform.
Allowing the use of tokens for the column output would mean the node reference could be output as a node label in the sheet.
At its simplest, this could be implemented by allowing each output column to be overridden with a token. A more flexible solution could have an arbitrary number of columns, where the content of each is entirely up to the user, allowing flexibility to include eg site information or the name and email address of the webform submitter.
