Add an option to delete log entities by category

We currently truncate the commerce_log table, which may be too broad for some use cases, given there are other use cases for logs besides the potentially sensitive data in the order activity streams. Let's add an option similar to `--sanitize-address-fields` for deleting log entities by specific categories.
