Provide form mode display selection in checkout flow configuration

Describe your bug or feature request.

In the checkout process i have shipping and customer profile.
I don't want show all field in the form. Some fields are only for admin or for other things.

May be useful to have the possibility to select which form mode use in the checkout pane configuration.

Same for review step.
Why can't select the display view mode from pane configuration?
