I have a "Rendered HTML Output" field in my search api fields setup. I have blocks of content added to the Full Content view mode of my node using layout builder. When I index the site, my search does find content which is listed in this block.
However, any edit of that node wipes the rendered content index and does not flag the content to be re-indexed. The only way i have found to have my search find the contents of this block after an edit is to clear all indexed data and re-index the entire site.
This can't be how this is intended to work.

, which currently even has an MR to test. Do you have “Index items immediately” enabled, and are there errors logged after you save the node? Then please try out that MR and report back in the other issue. (And close this one as a duplicate.)
