Make controls customisable

Problem/Motivation

The module provides very little configuration, you have to override twig files which requires developers. If we have a cool module which helps do all the work, wouldn't it be nice to offer more options?

Steps to reproduce

Try and create a field which renders a video without any controls.

Proposed resolution

Create more options which are sent to twig file.
