The project description starts with: "Easy Email Theme is an email-only theme to be used for sending HTML-formatted emails."
This theme is not intended to be used as your default site theme. If you want to use it for emails, that can be configured in the Mail System module configuration, or in the Drupal Symfony Mailer configuration if you're using that module.
