Unable to remove system.mail.interface default for devel_mail_logger

I was testing this out in a Drupal 10.3 installation. I have since uninstalled Mailsystem and Devel Mail Logger. However, the system.mail interface value is still set to devel_mail_logger. I can't unset it, I can't clear it, I can't change it. I have tried reinstalling and uninstalling devel_mail_logger.

It seems like devel_mail_logger's responsibility to ensure that it is removed from the system when it is uninstalled.
