Fix phpstan for Drupal 11 in modules/ai_validations once field_validation module supports Drupal 11

Problem/Motivation

Modules/ai_validations is excluded in phpstan.neon from phpstan since field_validation module does not yet support Drupal 11 and ai_validations depends on field_validation. Once either of these issues is resolved, the exclusion can be removed.

Once Drupal 11 is the only supported version, we can remove the exclude path as AI Validators relies on it.
