Rename setting to use module machine name

Problem/Motivation

Version 1.0.0-alpha4 introduced a new setting: migrate_skip_field_source_version. For consistency with existing settings, it would be good to use the the module's machine name as a prefix for the setting's name.

Proposed resolution

Rename migrate_skip_field_source_version to migrate_skip_fields_source_version. Notice the final s in fields.

API changes

A setting name has been renamed. No BC layer added for alpha releases. Document in release notes of new version.
