Remove simple-cache from dependencies

Problem/Motivation

psr/simple-cache is already a dependency of the phpoffice/phpspreadsheet package that this module depends on. It is therefore unnecessary to require this dependency again. Side effect of doing so is that we have it set to v1 and that prevents us from updating to v2 or v3, which might be required to resolve conflicts with other packages. This module does not really have a need to fix it to v1; it supports whichever versions phpoffice/phpspreadsheet supports.
