A lot of times in the e-mail there's a conditional thing that should only be displayed if some conditions happen. Right now, the current approach is doing all this logic in custom tokens. Also there is twig filter logic that also need to be rewritten as custom tokens if we'd like to build e-mails with this module.
I'd advise the approach Webform module is doing by adding a possibility to define e-mails via Twig syntax.
