Because the inbuilt menu theming ist not sufficient for my project, I need to switch it off and replace it with e.g. Superfish.
How do I do that?
There is no theme configuration toggle-switch available as your documentation suggests:

The display of the primary and secondary menu doesn't seem to be toggleable anymore.
And the theming seems to be applied to them automagically and therefore inescapably...
