Update Focal Point requirement to ^2.1

Problem/Motivation

Focal point ^2.0 is no longer supported, and should be upgraded to ^2.1 ( release notes → ).

Steps to reproduce

Attempt to update out of date modules, including Focal Point to stable version.

Proposed resolution

Update composer.json to require Focal Point ^2.1, and remove the patch that was fixed in that release.
