Ckeditor5 is destroyong HTML table formatting. Rather than try and explain what is going on I created a video to show you. This problem is preventing myself and I'm sure lots of other people moving away from depracated D9.
BTW, I forgot to mention, it only seems to be a problem on admin pages. It displays as expected on web pages. Unfortunately it needs to display the same on admin pages to be useful for me at least. The admin pages don't seem to be applying the same css as the display page.

I found and fixed the problem. In my custom theme's info.yml file I had failed to add my custom css declaration under the ckeditor5-stylesheets library like so:
ckeditor5-stylesheets:
- css/ck5style.css
- css/custom.css
