Problem/Motivation

There are more embeddings models available, see https://platform.openai.com/docs/guides/embeddings/embedding-models

Steps to reproduce

Settings form only allows text-embedding-ada-002 at the moment

Proposed resolution

Add all available ones, link to openai guide to help the site builder choose
