Address 2.x adjustments

Problem/Motivation

Commerce 2.37 is going to require Address 2.x (See 📌 Start using Address 2.x Needs review ), the "organization" field label changes to "Organization", we need to set it back to "Company" similarly to what's done in Commerce core, but for shipping profile types.
