Install and setup: Better indication of where you are in the installation so that you have info if something fails

Problem/Motivation

In `scripts/setup.sh` the first few commands have an `echo` before them, but that pattern gets abandoned partway. If one of those commands fails that makes it hard to know what failed.

Proposed resolution

An `echo` before every Lando command.
