Content is not unpublished when cron is run

You say 'workflow" so it sounds like you are using core Content Moderation? If so, you need to also install the Scheduler add-on module scheduler content moderation integration → . This is mentioned at the top of the project front page → but I agree that it it easy to miss. Hope this fixes your problem.

Just checking, do you mean "If I use scheduler content moderation integration" ?
Please can you link to the actual modules (both core and contrib) you are using, as this is getting confusing.

I have reinstalled the 'scheduler' and 'scheduler_content_moderation_integration' modules, but it seems that the fields are still missing. Something must have gone wrong, causing the fields to disappear. I apologize for any inconvenience caused.

No apology needed :-)
If you have re-installed Scheduler then that may have reset the configuration settings which set scheduler as enabled/disabled for the content type. That would have the effect that the scheduler fields are not showing on the form.
